| At Adour at The St. Regis Washington, D.C. the floor to ceiling, temperature-controlled wine vaults anchor each end of the Main Dining Room. Each vault contains 1,200 bottles. There are 6,500 bottles in the inventory, with prices starting at $25 per bottle. The Wine List at Adour at The St. Regis Washington, D.C. is a hand-picked selection of over 700 wines, showcasing a variety from main wine producing regions around the world, including regional vineyards in Virginia such as Boxwood Winery, Mountfair Vineyards and Barboursville Vineyard. Based on the principle of origins, the list pays tribute to the terroir of each region, allowing guests to taste and discover the roots of the wines, which, in a more classical program, are traditionally forgotten. Guests can enjoy wines in a variety of different formats, from more than twenty different wines by the glass to wines served from the half decanter and larger formats such as jeroboams and magnums, which allow for better aging and ultimately a better wine. In building the menu and wine list together, the result is a unique ability for both reds and whites to match perfectly with every dish.
